Pasta al Limone: Healthy and Delicious!



I recently saw David Rocco make a delicious lemon pasta in Sicily on the Cooking Channel and found a similar recipe at Vogue Italia so I want to share both recipes.  I've added some sauteed fresh tomato to the recipe also.

Ingredients

  • 1 pound spaghetti
  • 1 clove garlic, for rubbing
  • 2 lemons (zest of 1 lemon, juice of 2 lemons)
  • 5 tablespoons extra-virgin olive oil
  • Salt
  • 1 cup finely grated Parmigiano cheese, plus extra for sprinkling
  • Bunch fresh flat-leaf parsley, leaves picked and chopped

Directions

Place the spaghetti in a pot of boiling salted water and stir immediately to prevent the strands from sticking. Cook the spaghetti to 'al dente'.
Cut the garlic in half and rub the exposed area along the interior of a large serving bowl. The raw garlic flavor will coat the inside surface of the serving bowl. Discard the garlic. Add the freshly squeezed lemon juice and slowly drizzle in extra-virgin olive oil while whisking. Whisk until the ingredients have emulsified. Mix in the salt and Parmigiano cheese.
When the spaghetti is 'al dente', drain and add to the serving bowl. Mix the pasta with the lemon sauce to coat evenly. Sprinkle the pasta dish with Parmigiano cheese, fresh parsley and lemon zest. Serve immediately.

Shopping list for two:
4 organic lemons
3 sweet green chili peppers
spaghetti
chopped parsley (quantity as required)

It’s healthy because:
- It is a light and easy main course, easy to digest. Everybody will appreciate it but it is particularly suitable for two categories of people:
Those who have to reduce their cholesterol level: this dish does not contain saturated fats but only extra virgin olive oil
Those who must follow a hyposodic diet (those suffering from hypertension or subject to water retention) as salt is replaced by the green chili peppers, tasty and rich in vitamin C, just like the lemon juice used for the seasoning.


Suggested foods during the day :
-  Second course: after the lemon pasta we suggest grilled or steamed fish with a hearty serving of vegetables to top off your diet with fish protein, fibers, minerals and the vitamins contained in fresh vegetables .
-  Lunch/dinner: vegetable soup + low fat ricotta (100g), plus 2 poached or hard-boiled eggs with mixed vegetables + small bread roll + a piece of fruit
